Arugula Salad with Apples and Parmesan

So…a few things to mention. 1) I apologize for going off the grid for the past couple of weeks, 2) I feel like I had a pretty good reason…I got engaged!, and 3) I really hope you love this recipe. Bart and I went over to our friends’ house, Brett and Alessandra’s, a few weeks ago for dinner and Alessandra made this amazing salad – it is super simple, but I seriously could not stop thinking about it. Clearly Alessandra knows her way around the kitchen, because there was no recipe, she just “threw it together” (color me jealous). After a few attempts at trying to re-create it, I think this is pretty close. And it is a good thing too, because I am obviously now on the wagon and will be eating lots of greens (and unfortunately less desserts) for the coming months. I hope you love it as much as I do – oh, and that fiance of mine that dislikes anything green? He loves it too. Just saying.
Directions:
- Place arugula in a large mixing bowl.
- Add olive oil and lemon juice, mixing well after each addition.
- Add apple and parmesan.
- Divide into individual bowls and serve!
