I am really proud of this particular recipe – it feels very grown up to me for whatever reason.  And by “grown up”, I do not mean difficult – I clearly do not do “difficult”.  :)  I’ll be honest in that I didn’t really know what Chicken Rollatini was (and I still really don’t) – maybe it is just rolling...
